Winter’s day harvest

photo.jpg

Last night’s dinner

It was kind of stressful around here yesterday…Things breaking, repair people coming in, a lot of hubbub for a normally quiet Thursday.

So I decided some comforting soup was in order.  Here is what went into the slow cooker:
carrots, onion, celery, parsley – all sauteed in olive oil
added one game hen quartered, plus about 5 cloves of garlic cut in half
then chicken broth, veg broth, a can of tomatoes, and the ever present parmasean cheese rind.

After about 2 hours, I removed the hen and took meat off the bone and added it back to the broth

(If you are reading this Ray, Sorry!)

Add some white wine, to the broth, red potatoes quartered, fresh kale from the garden, and a can of chick peas.  Continued cooking until potatoes were tender.

It was very nice – comforting, low fat, just delicious.  Would've been better if we were actually having winter weather instead of a heat wave.

Photo coming soon…
Happy Friday everyone,
Cynthia
