Apple Store Opening

The store will open at 10:00 -about 15 minutes from now. This is Dan.

Summer Wildflowers

I managed to keep a little patch of wildflowers alive through the early summer heat.  These flowers are from the Oklahoma Texas seed mix from Wildseed Farms in Fredericksburg.  This is the first year I have had good luck with the seeds, and I am excited that they are still going.  There are even some blue bonnets blooming and it is mid-June.

the flower colors seem a bit faded out but that is because of typepad.  They are quite bright and lush in the garden.

Harvesting Corn

The corn was ready to be picked this week.  The ears are pretty small, maybe 4-6 inches at the most.  But it is sweet and good.  Next year I'll do some research and get seeds for bigger ears of corn.  As it is, we've been eating these right off the stalk.

Black Bean Burgers

I am in pursuit of a great Black Bean Burger recipe.  I have tried two so far, and both are fine, but nothing to write home about.  If you have a good recipe to share, you are welcome to post it in the comments section, or send it to me via email.

Tonight’s dinner: salsa and chips

I used some of the fresh tomatoes to make some lovely salsa.  

About 3 years ago, I traveled to San Miguel de Allende for a week long holiday.  While I was in San Miguel, I took a couple of cooking classes – one on mole, one on salsas.  Tonight's recipe is loosely based on Maria's roasted salsa recipe.  

I bought a comal in San Miguel, and cooked the veg on it.  You could just use a cast iron skillet.

Heat the comal on low to medium heat
Place on the hot comal:
~2 garlic cloves with skins on
~1 serrano pepper or jalapeno
~1/2 onion with skin
~2-3 ripe tomatoes

Let the garlic, onion, and serrano get dark brown spotting – turn frequently so they don't actually burn. Turn the tomatoes often so they blister – using tongs helps with this.

Then peel the skins off the onion and garlic, peel the burnt skin off the pepper, core the tomatoes.

Place all in a food processor and chop.  You can make big or small chunks – mine came out in small bits because I was multi-tasking.

Add salt to taste and enjoy.

Variations:
~remove some of the seeds from the tomatoes so the salsa is less watery
~add cilantro and lime to the food processor
~add 1/2 avocado to food processor
~use same ingredients without roasting them

Little Gems

This morning, I found some small serrano peppers growing in the garden.  I have been spending a bit less time in the garden lately and these lovely greenies were a nice surprise.

In New Mexico, they sell goofy red and green chili Christmas Tree lights.  I think I'll get a few strands of shiny plastic chili lights to help me remember this June morning in my garden.
